3 Delicious Energy Boosting Treats

We have all been there! Sometimes you need that extra push to have enough energy during your busy day. Here are a few delicious vegan recipes that will help.

Raw Super Food Energy Bars With Cacao

- 1 cup walnuts 
- 1/3 cup chia seeds 
- 1/3 cup ground flax seeds 
- 1/3 cup hemp seeds 
- 1/4 cup cacao nibs 
- 1/4 cup coconut flakes 
- 3/4 cup pumpkin seeds 
- 1/2 cup raisins 
- 1 cup dates 
- 1-2 tablespoons melted coconut oil, if needed 
- Throw the dry ingredients (keep a little bit of each ingredient to add in a second) in your food processor, then add the dates and raisins and process until everything it starts to stick together. If too dry, add more dates or coconut oil. 
- Put in the remaining dry ingredients you left out and mix in with your hands. 
- Press into a lined pan and set in the fridge for an hour or more. 
- Cut into bars and store for up to one week. If you have extra, shape them into cupcakes and top off with raw chocolate. 
Almond Joy Oat Bran Granola Bars

- 2 cups oat bran 
- ½ cup maple syrup 
- 1 teaspoon vanilla extract 
- ½ cup peanut butter 
- ⅓ cup chopped almonds 
- ⅓ cup shredded coconut 
- Melted chocolate, for drizzling and topping (1/3 cup chocolate chips+1 teaspoon coconut oil) 
- Preheat oven to 350 degrees F, grease an 8×8 or 9×9 pan and set aside. 
- In a medium bowl, combine all the ingredients, except for the chocolate. Make sure the mixture is combined throughly and becomes thick and somewhat sticky. If the mixture is very dry, add a bit more maple syrup and peanut butter until it can be pressed together easily. Press the mixture into the greased pan evenly and bake for 20-25 minutes, or until edges are golden brown. After cooling and cutting, drizzle with melted chocolate. 
Mocha Chip Bars

- 1/2 cup almonds 
- 1/2 cup walnuts 
- 1 1/4 cup (packed) dates 
- 3 tbsp unsweetened cocoa 
- 1 tsp instant coffee 
- 1.5 tsp vanilla extract 
- 1/4 cup chocolate chips 
- Add nuts and dates into food processor and blend well. Then add in the cocoa, coffee, vanilla, and chocolate chips and blend a bit more until all the ingredients are mixed, chopped up, and the texture is moldable. 
- Form into whatever shapes you’d like! I found that making balls out of tablespoon measures are the easiest for me. (Also the easiest to eat ;) ) 
- Store these in a sealed container in the fridge. They will last for quite a while, unless you’re like myself and devour these within the first few days. 
- I must suggest to have a bit of patience as these get better with age! After storing them in the fridge for a few hours, the flavors fuse so well! They get even more addicting after a day or two, so hands off for a bit folks.
